One of the famous dishes in Goa, vegetarian dishes in Goa is Khatkhate.
It’s fusion of vegetables that are cooked and served in the typical masala in Goa. Khatkhate is a typical Saraswat Bharamin Community preparation served at pujas, weddings etc.
The preparation involves using veggies like radish, turnip, pumpkin, sweet potato, potatoes, corn; drumsticks in coconut gravy (use what you can lay your hands on). Soy as coconut is called and mind you Goans when they say “Soy” they mean freshly grated coconut. The ingredient that you need to get used to is triphal or tephal or Sichuan pepper which has a unique taste and lends an aroma and taste that you need to get used too.
You either love Khatkhate or hate it.
Yam or Elephant’s Foot in English is called Suran in Marathi and Surangaddi in Kannada . Yam makes a delicious chips or in this case as my daughter’s who seem to think Indian food is not cool these were Yam Steaks.
If you seen the full yam it does remind you of an elephant’s foot . The first time my daughter saw it as a child her reaction was what stone is this? Looks as ugly. Small wonder that it’s not appreciated in my house.
Have you watched the old Hindi film “Bawarchi”? Rajesh Khanna is the cook and on his first day of his job he makes what the family members think of as mutton well actually its yam. My mom made it just like that so also my co-sister but I cannot manage it. So in my house it ends up in sambhar, veggie which no one eats or cutlets which everyone adores.
But this time I made them in these kappas sorry steaks.
In my mind X was Xauti or X’mas Cake full stop.
But when I was discussing with my girls what I should be making for the alphabet themed BM there was only one voice that said Xec Xec!!
The only Xec Xec I know of is crab Xec Xec so the first thing that was to think of was the substitute for crabs.
Then the replacement for crabs should be something that will not clash with the different masalas that go in Xec Xec, a delicious Goan preparation. I was skeptical. How will I be able to recreate the magic of Xec Xec?

A delicious fragrant payas traditionally Goan made in coconut milk. With the abundance in coconuts that we have coconut milk is used in almost all the Pasayam or Kheer.
Milk I believe was scarce and was hardly used. After all traditional cooking is making use of nature’s blessings! Honestly Goans generally do not like curd or milk. For a person like me who cannot think about not using milk this continues to be a shock. Continue reading
My friend Sangeeta rang me up and asked me if we like jackfruit. She told me that she had 2 from her father’s orchards; one of them she said is kappa and the other rasal. Will I be interested in them both!
For uninitiated kappa phanas, phanas is what a jackfruit is called in Marathi and Konkani, kappa is where you get lovely jackfruit, and the fruit is firm not sticky and can hold its shape. Rasal is, you guessed right all the opposite, it’s sticky and tends to be slimy! There is little wonder that kappa phanas is in great demand.
But out of rasal phanas you can make phanas poli and dhonas. The two things i know of! And So I agreed. I got the recipe from Sangeeta herself she told me the methodology and the measures but then I forgot all the measures. So who else do you turn to? My Google friend and i found this recipe at the site .

What do you see? Breakfast…
Breakfast is an important meal and breakfast should have all the four components of food i.e protein, carbohydrate, fat and minerals.
Most traditional reflect this combo in some form or other. Take Dosa chutney, paratha and curds they are complete meal by themselves.
In Goa there are a lot of Portuguese influences so pav or bread forms an integral part of diet. So every morning you will hear the Pav Walla called the “Poder”, trading his wares loaded in a basket and on a cycle.
The lady of the house will make suki bhaji, alsande tonak, chana cho ras, salad bhaji or tomat bhaji. This is eaten with the pav or unna else buns. These buns are not your usual buns from the bakery but they are deep fried and like puris only softer, spongier and sweet (will post the recipe soon)!
Goa gets 100 inches of rain. And so we can safely say when it pours it pours. You cannot escape getting drenched. With the rains comes the ban on deep sea fishing and so the trawlers do not venture in the seas. Goan being Goans miss their fish and some go fishing and fish in the riversides. It’s common to see men patiently plying their nylon strings with different baits and trying their luck.
Then comes the month of Shravan so no fish or chicken But it’s the right time for mushrooms or Almi as they are called here!
Not for us are the common button mushrooms that are available all year round but the delicious ones that grow in the forests, on the anthills. Sharavan with its play of heavy rains and sunlight helps these delicacies to grow. They are highly sought out and hence very expensive at Rs.500/- to 700/- for 100 buds the vendor says they are a steal! As a buyer I am yet to count 100 of them in a packet.
Mushrooms fresh, mushrooms!!
The packaging is done not in plastic cloth but in the leaves that are picked from the forest. (In my desire to finish buying them I have never checked the name of the tree from which the leaves come from. Will rectify matters this season.) They are displayed on the leaves and you bargain with the lady as,
“ Var Bai. Bare Valle Kalye asa!”
“ Vallle Ge? Kashe they. 100 Asa? Mesun ghalta? Mage?”
“Avaish Naka Ge”
Translated you ask the lady “how much “
“ Take Bai. They are big buds!”
Big ones? How much? Are they 100? Will you count and give me 100?”
Loosely translated Avaish is mother mine I do not want them.
Go around then come back because she has the best ones and tell her that you are willing to buy 2 or 3 packets how much she charge you. So she will tell you say 600/- you end up paying 500/- if there is too much competition and if you are lucky.
Then begins the hectic race.
