BienenstichKuchen/ German Bee Sting Cake.

IMG_5057Since baking for We Knead to Bake I have come across different breads. Most of them something I never knew existed. It’s been an amazing experience.

For We Knead to Bake this festive season we are baking BienenstichKuchen/ German Bee Sting Cake.    

Bienenstich is not really a bread but a traditional German sweet yeasted cake baked with topping of crunchy almond toffee-like layer and filled with a vanilla pastry cream. Bienenstich is traditionally eaten as dessert and also served with tea or coffee.

Its name Bienenstich in German means “bee sting” and probably got its name from the honey flavoured topping that it typical of this yeasted cake.

Z for Zwieback

Today is the last day of the Blogging Marathon with alphabets. It has been a wonderful series and I have enjoyed myself a lot. There is nothing like being among friends and likeminded ones who think mostly about food. Well it’s the cherry on the top, the icing on the cake… to name a few metaphors.

See these are also food related. LOL!

For the alphabet Z I wanted to do yes you guessed right Zucchini bread. But then family seemed to sense it,” No Zucchini” was the dictate! Well then I started thinking about Zebra cake and as I was speaking to Vaishali. She said it’s difficult and being short on patience anyway I was in half mind… So out went Zebra cake.

Back to Google and I found this Zwieback at King Auther’s here. So that was that my search ended and I baked this delicious toast.

Spring Onion Flowers

Spring onion flowers are made out of the spring onion bulbs. These look pretty and bloom faster that the carnations.

To make the spring onion flowers remove the greens in such a way that you can comfortably hold the spring onion bulb remove the root too well else your flower will not open well. Take a look at this one.

With a very sharp knife cut the onion from the root towards the green.  Then once again cut perpendicular to this cut. Repeat till you cover the whole onion. Now drop it in ice cold water. I wanted to colour these a lovely yellow and pink but since the colours were used up in oil and water project headed by Akanksha I had to keep them   plain white. These need about 3 hours in the fridge.

Attach them to skewers and use them with the carnations for your table decoration.

Carnations

We had been for a wedding in fact it was Candida Andrade’s wedding and there the decorations at the buffet table were amazing there were carnations of a very different colour and some other colourful lilies.   Closer inspection showed them to be onion carnations and cucumber lilies.

I went and asked the waiter about the creator of the flowers.  Since Michel the caterer and the man behind the flowers was around he gave me a demo. The cucumber lilies I am yet to try but the carnations are here.

Here I have tried making a carnation out of the onion. Take a look.

You need to cut the onions from the top and stop before you reach the root.

Then make another section similarly perpendicular to your cut. Next one is between these cuts and so on. Just take care they are attached to the root.

Once done put the onion in ice cold water for 8-10 hours Michel said he kept them overnight and the onion opens out. You can colour them too just add food colour to the water in which you are soaking them.

While demonstrating putting them on the what we call in Goa ”viri” Michel pressed it squashed the onion  on the top . So his Michel’s flowers had bloomed out very beautifully.

Mine was in the fridge for approximately 4 hours and I tried making it open up gently. Mine is on a skewer.

Viri is what is used to make your stick broom, the coconut leaf vein midribs.
